Green Tea

Originating from China, green tea is made from the unoxidised and unfermented leaves of the Camellia sinensi. Predominantly produced throughout China, Japan, Korea and Southeast Asia during a spring growing season that runs from March to May, green tea has gained rapid popularity in the West thanks to its health-boosting properties and delicate, fresh flavour.

Black Tea

A fully fermented variety, black tea (also known by the Chinese as red tea) refers to the distinct copper colour of the brew. The manufacture of black tea involves five steps – withering, rolling, fermentation, roasting and sorting – which are used to distinguish the various grades of tea.

Gunpowder Black

Gunpowder Black

Boasting colours that range from hints of dark green to black, this variety’s leaves are rolled into pellets, much like they are for green Temple of Heaven tea. Unlike green gunpowder tea, however, this variety is fermented, which lends a distinct golden-brown colour to its brew.

Smoked Tea

A specialty of the Chinese province of Fujian, smoked tea’s manufacturing process is identical to that of a conventional black tea. However, after the rolling, the leaves are lightly toasted on a hot iron plate and placed over a fire for smoking.

Lapsang Souchong

Lapsang Souchong

Also referred to as Zengshan Xiaozhong. The final stage of production sees the leaves hung in baskets over smoking pine wood fires to dry. The result is intensely black leaves that give a dark red colour and a distinctive smoky aroma and taste.

White Tea

A specialty of the Chinese province of Fujian, white tea is made from the youngest buds and softest leaves of the Camellia Sinensis. Completely unfermented, white tea undergoes only two operations: withering and drying. There are two main types of white tea: the Silver Needles and Bai Mu Dan.
